Mixed vegetable curry



This is a tasty vegetarian curry made out of a mix of many vegetables; it is very healthy and delicious .


Ingredients

  1. Potato-2
  2. Carrot-2
  3. Beans-1 handful [cut beans in lengthy pieces]
  4. cauliflower- 1/2 cup
  5. Green piece- 1/2 cup [Soak it in water for 6 hrs. After that cook it in a pressure cooker and keep it aside]
  6. Onion-2
  7. Tomato-2
  8. Ginger Garlic paste- 1 tsp
  9. Grinded coconut- 1 cup
  10. Cumin seeds- 1 tsp
  11. Mustard seeds- 1 tsp
  12. Salt
  13. Turmeric powder-1/2 tsp
  14. Chilly powder-1 tsp
  15. Coriander powder-2 tsp
  16. Garam masala-1/2 tsp
  17. Curry leaves
  18. oil

Method of preparation

Heat oil in a pan . Add mustard seeds. When it pops up add cumin seeds in it. Add curry leaves and fry. Add chopped onion and fry it till it turns golden color. Add ginger garlic paste and stir it well. Add all masalas... salt, Turmeric powder, Chilly powder, Coriander powder and Garam masala. Saute it for 3 minutes. Add chopped tomato in that. Stir it for 3 minutes. Add chopped potato cubes and fry for 10 minutes. Stir it.. then add all other chopped vegetables... carrot, beans and cauliflower. fry it well for 5 minutes. Add cooked green piece and mix it well . Add 1/2 cup of grinded coconut with little bit water. Cover the pan with a lid and boil till vegetables get cooked. Uncover the pan and add remaining coconut milk boil it well.

Chana masala





Chana masala is a famous vegetarian dish in India, especially in north India. The main ingredient is Chickpeas (added picture of chickpeas). This is a very good dish for chappathi and paratha.

Ingredients

  1. Chick pea - 2 hand bowles(soak in water before 6 hrs)
  2. Onion-3 medium
  3. Green Chilly-1
  4. Curry leaves
  5. Ginger garlic paste-1 tea spoon
  6. Grinded coconut-1/2 cup
  7. Chilly powder-1/2 teaspoon
  8. Turmeric powder-1/4 teaspoon
  9. Coriander Powder-2 teaspoon
  10. Garam masala-1/2 teaspoon
  11. Tomato-1
  12. Coriander leaves
  13. salt to taste
Method of preparation

Cook chick pea in a pressure cooker (4-5 whistles). Keep it aside. Take a pan put oil and heat. Add Chopped onion and fry it. Add curry leaves, chopped green chilly and ginger garllic paste. Stir it till onion turns golden in colour. Add salt,chilly powder,turmeric powder, coriander powder and Garam masala. Stir it well. Add chopped tomato and stir it well. Add cooked chick peas and mix it well. Add 1/4 cup of water and grinded coconut. Boil it. Add coriander leaves and stir it. switch off the stove. Garnish the dish with Coriander leaves.
