Ayala Thoran


Usually we prepare thoran out of different vegetables. This one is a special thoran out of fish. The best fish for this recipe is Ayala.

Best served for 4 people

Ingredients
  1. Ayala Fish- 4 medium
  2. Onion- 1
  3. Green chilly-3
  4. Curry leaves
  5. Salt to taste
  6. Turmeric powder-1/2 tsp
  7. Mustard seeds- 1/2 tsp
  8. oil
  9. Grated coconut- 1/2 cup

Method of preparation

Step 1

Marinate Ayala fish with Salt and Turmeric powder. Start cooking and stop when it is half cooked (Full cook only in later steps). Keep it aside. When it gets cold make it into small pieces by hand, as you see in the picture of thoran.

Step 2
Take a bowl add chopped onion , green chilly, curry leaves and the fish. Mix it well .

step 3
Heat oil in a pan add mustard seeds. When it pops up add the content in the bowl. fry it well for 3 minutes. Sprinkle some water and cook fish . (Be careful while adding water. just sprinkle thrice) . When it becomes dry add grated coconut in that. Stir it well and switch off the gas.

Carrot-Beans Thoran





Ingredients
  1. Carrot
  2. Beans
  3. Grated coconut-1/4 cup
  4. Green Chilly- 3
  5. Curry leaves
  6. Mustard seeds
  7. Oil
  8. Turmeric powder- 1/2 tsp
  9. Salt

Method of Preparation

Take a bowl , add chopped carrot, Beans, Green chilly and curry leaves. Add salt to taste , Turmeric powder and mix it well .
Heat oil in a pan add mustard seeds in it . When it pops up add contents in the bowl to the pan. Mix it well and fry for 3 minutes. Add little bit water (1/4 cup is more than enough). Cover the pan with a lid and cook. When it becomes dry and cooked add grated coconut in it and mix it well. fry till the dish becomes dry.

Pepper Carrot fry




Pepper carrot fry is a very simple dish with carrot. It is really tasty and spicy too. Let us see how to prepare this.

Ingredients

  1. Carrot [chop carrot into thin but lengthy pieces as you see in the picture]
  2. Onion - 1 medium
  3. Ginger Garlic paste - 1 teaspoon
  4. Pepper powder-1/2 teaspoon
  5. Salt to taste
  6. Oil
Method of preparation

heat oil in a pan. Add chopped onion in it and fry it for 3 minutes. Add crushed ginger garlic paste in that and stir it well. Add chopped carrot. Stir.... Add salt to taste and pepper powder. Stir it till carrot gets cooked.

Vanpayar (Red cow peas/ Red chori) sabji




This is a typical kerala style sabji. Vanpayar (Red cow peas/ Red chori) has lots of healthy benefits. This recipe is really simple and short. This can be used as a side dish for rice. Even you can have this with chappathi and paratha.

Ingredients
  1. Vanpayar (Redd cow peas/ Red chori)-2 full hand bowls
  2. Green chilly-1
  3. curry leaves
  4. Onion-2
  5. Garlic-4 cloves
  6. Red chilly powder-1/2 teaspoon
  7. Turmeric powder-1/4 teaspoon
  8. Salt to taste
Method of preparation

Step 1
Put Vanpayar (Red cow peas/Red chori) in a pressure cooker add red chilly powder,turmeric powder and boil it [3-4 whistle]. Keep it aside.

Step 2
Heat oil in a pan fry chopped onions,curry leaves and green chilly. Once onion turns golden add salt and boiled Vanpayar (Red cow peas/Red chori). stir it and mix it. Once it becomes dry add smashed garlic ,stir it and mix well. Close pan with a lid for a while(1 minute). Switch off the gas.

NB:

1. Since this is a dry item be careful while adding salt. 1/2 teaspoon will be more than enough.
